- 2 Cups Of Cooking Oil
- Make up a pot Homemade Enchilada Sauce
- 4 Mexican Poblano Peppers
- 2 cups of Mexican Manchego Cheese
- 2 8 oz Chicken Breasts

This is The Bald Chef’s recipe for Mexican Chilaquiles. The first step is take your 12 Corn Tortillas and with a knife cut the Tortillas into quarters. In a large Fry Pan add 2 Cups Of Cooking Oil and bring to high heat on your stove. Fry your Corn Tortillas quarters into crisp Tortilla Chips. Make up a Pot of The Bald Chef’s Homemade Enchilada Sauce. Cook two Chicken Breasts Homemade Enchilada Sauce until tender. in the Fire roast 4 Mexican Poblano Peppers and skin and seed the peppers. Cut the Poblano Peppers into strips and add to the Sauce. Yay down layers of Tortilla Chips, Cooked Chicken, Poblano Peppers, and red sauce and top with 2 cups of Mexican Manchego Cheese. Preheat Oven 350 for 20 min. , ready to serve.
