Ingredients
- 1 lb ground buffalo meat
- 1 can (28 oz) crushed tomatoes
- 1 small Spanish onion, chopped
- 2 cloves garlic, chopped
- 2 poblano peppers, chopped
- 1 can (15 oz) Goya Spanish brand red kidney beans, soaked overnight and drained
- 1 cup dark chili powder
- 1 tsp black pepper
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- 1 tbsp habanero sauce (optional)
Instructions
- In a large pot, brown the ground buffalo meat over medium heat until it is fully cooked.
- Add the chopped onion and garlic to the pot and sauté for a few minutes until they are softened.
- Add the chopped poblano peppers and continue to sauté for another few minutes until they are also softened.
- Add the soaked and drained kidney beans, crushed tomatoes, chili powder, black pepper, cumin, cayenne pepper, and habanero sauce (if using) to the pot and stir well to combine.
- Bring the chili to a simmer and let it cook for at least 30 minutes, stirring occasionally.
- Taste the chili and adjust the seasoning as needed, adding more chili powder, cayenne pepper, or salt to taste.
