Ingredients For Fresh Korean Kimchi

These are the ingredients you will need to make Fresh Korean Kimchi:

1 Head of Cabbage
1/2 Daikon Radish
1 1/2 Cups Sea Salt
1 Cup of Water
3 oz. Fresh Ginger
30 Cloves of Garlic
1 Carrot
6 Green Onions
10 Tablespoons Dryed Korean Red Pepper Powder or better known as Kochukaru
1 Tabelspoon Brown Sugar
5 Teaspoons Fish Sauce



Instructions For Making Fresh Korean Kimchi

This is The Bald Chef’s recipe Fresh Korean Kimchi made with his Wife Kyung. Take the 1 Head of Cabbage and cut up thin. Place the Cabbage into a Large Bowl, add the 1 1/2 Cups Sea Salt, 1 Cup of Water. Mix the Cabbage and Sea Salt, and set aside for about 1 hour.Take your 3 oz. Fresh Ginger, and 30 Cloves of Garlic and smash the mixture in a Mortar and Pedestal With a sharp knife chop the 1/2 Daikon Radish, 1 Carrot, and 6 Green Onions into thin julienned strips. Now for the MOST IMPORTANT STEP, wash your cabbage with fresh water a few times to remove most of the salt, and set aside. In a large bowl mix the crushed Garlic and Ginger and Cut Vegetables. Then add 10 Tablespoons Dryed Korean Red Pepper Powder or better known as Kochukaru, 1 Tabelspoon Brown Sugar, and 5 Teaspoons Fish Sauce. Now mix in the Cabbage to the Vegetable and spice mixture and mix it up. This is Fresh Korean Kimchi.
