Homemade 3 Bean Salad Recipe

  • 1/2 cup red kidney beans, soaked overnight
  • 1/4 pound yellow wax beans
  • 1/4 pound fresh green beans
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon and 1/2 good quality balsamic vinegar
  • 1/2 tablespoon sea salt
  • 10 turns of cracked black pepper
  • 1/4 cup chopped Spanish onion

Cooking Instructions:

  1. Drain and rinse the soaked red kidney beans and add them to a pot of water. Bring to a boil and then reduce to a simmer. Cook for about 20 minutes, or until the beans are tender.
  2. While the kidney beans are cooking, prepare a large bowl of iced water. Bring a pot of water to a boil and blanch the yellow wax and green beans for about 2-3 minutes, or until they are tender but still crisp. Remove the beans from the boiling water and immediately transfer them to the ice water to cool down.
  3. Once the kidney beans and the wax and green beans are cooked and cooled, add them to a large bowl. Add the chopped Spanish onion, olive oil, balsamic vinegar, sea salt, and cracked black pepper. Toss to combine and coat the beans evenly with the dressing.
