Fish Po Boy Sandwich

Hello folks, today we’re going to be putting together a southern favorite, the fried fish po-boy. If you’ve ever been down to the Big Easy in Orleans, you know that this is some pretty big stuff. It’s basically a fried fish sandwich that I make here and I tell you what, it’s top of the line stuff. The recipe is easy to put together and I think you’ll find it to your liking, so let’s get started and I’ll show you exactly how we put this one together.

Ingredients:

Louisiana brand seasoned beer batter mix (about half a container)

-Beer (1/4 cup)

-Cod fillet or catfish

-Vegetables (tomatoes, lettuce)

-Good quality bread

-Butter

-Vegetable oil (about 1 1/2 cups)

-Hellmann’s mayonnaise

-Squirts of sriracha or Tabasco

Cooking Instructions:

  1. Mix up the batter using the Louisiana brand seasoned beer batter mix and 1/4 cup of beer.
  2. Slice up vegetables such as tomatoes and lettuce
  3. Take good quality bread and cut it in half. Spread butter thinly on the bottom half of the bread and toast it in the oven until it is golden brown and moist.
  4. In a cast-iron pan, heat up about 1 1/2 cups of vegetable oil.
  5. Take your cod fillet or catfish, and coat it with the batter. Place the fish into the hot oil and cook for about 1-2 minutes on each side.
  6. Remove the fish from the oil and lay it on a plate lined with paper towels to remove excess oil.
  7. Mix up a sauce using Hellmann’s mayonnaise, sriracha or Tabasco, and a squirt of lemon juice.
  8. Assemble the sandwich by spreading the sauce on the bottom half of the bread, placing the fish on top, and then adding the vegetables.
